Veggie cooking part 1: tofu time.

I love Spaghetti Bolognese. But of course, now, as a Vegetarian, minced meat is not an option. So a friend recommended me a recipe for spaghetti tofu-bolognese. (The recipe is in German but at the bottom of the page you’ll find a video in which the chef himself cooks the recipe in English.)

The only problem is that there are different kinds of tofu. When I went to a discount store and saw sliceable tofu, I just bought it and used it for the spaghetti. I had no idea how many types of tofu exist. While the sauce tasted really good, the neutral tofu flavour couldn’t fully convince me. My parents weren’t too enthusiastic about it either. At least my mum called it “edible” :) But next time I’ll probably use almond or smoked tofu, maybe that’ll be more to my liking.

 Veggie cooking part 2: preparing food for a Birthday party

 It was only a small party, just with my family and close friends. Usually, we would cook chili con carne or meatballs, etc. But not this time - no, no carne, no meat. Only a few sausages to please the male guests. The other dishes we prepared were vegetarian: Gouda salad, gnocchi salad and potato salad (yes, potato, very German ;)).

Overall, I think, everyone went home well fed and they generally liked it. But you could tell that the men would rather have eaten something more “meaty”. “A man’s gotta eat”, right? They didn’t explicitly criticise the lack of meat but their comments ranged from “there’s grass in my food” to “Did you invite a rabbit?” (Regardless, they went down the rabbit hole ;)) Personally, I enjoyed the food :)

 Recipes:

Gouda salad: (6 portions)

 250g Gouda cheese, 1 tin of mandarines, 1 cup of seedless grapes, 1 tin of pineapples, 2 apples, 250ml cream, 2 tbsp Miracel Whip, 1 tsp cayenne pepper, 2 tbsp grated coconut (if you like, I left it out) (to view the recipe in German click here)

Gnocchi salad: (2 portions)

325g gnocchi, 1 small onion, 1 red bell pepper, 1 zucchini, 2 tbsp of olive oil, salt & pepper,

Vinaigrette: 

1 clove of garlic, 1 tbsp of white wine vinegar, 2 tbsp of olive oil, 1 ½ tbsp of tomato paste, 3 tbsp of vegetable broth, salt & pepper, 10 basil leaves (to view the recipe in German click here)

 Potato salad:

 750g potatoes (low starch), 200g Rucola, 2 red onions, 250g sheep cheese, 5 tbsp of olive oil, 4 tbsp of white balsamico vinegar, salt & pepper (to view the recipe in German click here
